Opening a restaurant seemed like a challenging but fun idea to both. Christy’s experience in the service industry and Justin’s business background could prove to be a good combination. They sought out used restaurant furniture and (usually broken) kitchen equipment. Buildout was a long and expensive process, almost 2 full years. In January of 2012, they both quit their respective jobs and walked into a never-used, brand new kitchen with broken equipment. Through actual blood, sweat, and sometimes tears, they repaired stoves, fryers, and steam tables.

In March of 2012, Justin and Christy opened "Avery’s Po-Boys," naming the restaurant after their daughter. At first, the idea was to just sling po-boy sandwiches to construction workers building the UMC and VA Medical Centers down the road. But soon, almost immediately, they found new and interesting ways to do a very traditional dish. Po-Boys and appetizers like the Buffalo Shrimp and Fried Potato Salad began to emerge from the kitchen.
Soon, the menu was becoming more creative and different than any other place serving similar fare. In 2014, they re-named the restaurant "Avery's On Tulane" to separate themselves from "just another po-boy shop" and to reflect the pride they have in the ever changing neighborhood they chose to invest in. They are dedicated to the revitalization of New Orleans and Tulane Avenue and pride themselves on the quality of food that they serve. Everything is freshly made to order using the best local ingredients New Orleans has to offer plus a fully stocked bar.
